Healthy Okra Casserole
(has no butter, oil, added salt, or carbs) 1 cup chopped okra
1/2 cup chopped tomatoes
1/2 cup thinly chopped green onions (about 4)
1 minced garlic clove (or to taste)
1 tsp pepper
1 egg
1/2 cup sour cream
1/2 cup shredded cheddar
1/2 cup chopped pecans/almonds/walnuts
Parmesan cheese Mix okra, tomatoes, onions, and garlic in a sprayed casserole dish. In a small bowl, mix egg, pepper, sour cream and cheddar cheese and stir into the casserole mixture. Sprinkle nuts and Parmesan (I like a lot of Parmesan) on top. Bake at 350 for about 35 minutes.
